Girl Scout Thin Mint Cookie Balls
It's that time of year again when your local Girl Scouts are selling those delicious boxes of delectable goodness. If Thin Mints weren't already yummy enough, here's a recipe for how to make them even better!

I don't know how I end up down some of these rabbit trails. I have this weird brain that skips off to chase butterflies, and then suddenly wonders what the dust on their wings is made of. Then I spend days poring over everything I can find on butterfly dust. I research weird stuff, learning endless amounts of absolutely useless information, all of which I find quite interesting.

This is my recipe for "Rustic Fall Pear Galette". I say "my recipe," which means I stole it from Cooking Light Magazine about 10 years ago, tweaked it a tad, and have been making it ever since! :) It's absolutely delicious and really easy to make. Even if you're inept in the kitchen, you can pull this off, and yet it looks like you "did something!"
I add walnuts and/or dried cranberries, and perhaps a dash of cardamom spice, thus making it "mine." I've seen many variations of the recipe over the years, some with apples. But I always come back to this one. Cooking Light says it serves 8 but, if you ask me, it's more like 4. ;)
