Girl Scout Thin Mint Cookie Balls
It's that time of year again when your local Girl Scouts are selling those delicious boxes of delectable goodness. If Thin Mints weren't already yummy enough, here's a recipe for how to make them even better!

Ingredient Note: Although you can use the large chocolate and vanilla flavored blocks of dipping candy, Wilton's candy coating discs are far superior. They are available in various colors and flavors and can be purchased at Amazon.com, Michael's, Wal-Mart (in the cake decorating section), or a baking supply shop in your local area.
Thin Mint Cookie Ball Instructions:
Place the entire box of Thin Mint Cookies in a food processor. Pulse cookies until they resemble dirt. Empty cookie crumbs into medium sized mixing bowl, add the cream cheese in 1/8 sections, incorporating cream cheese with wooden spoon until the cookie crumbles are coated, no evidence of cream cheese remains and the crumbs are moist enough to roll into balls. While the cookie and cream cheese mixture is chilling, line cookie sheets with parchment or wax paper.eam cheese so be sure to incorporate a little at a time. Place the mixture in the refrigerator for five minutes to chill.
Remove the bowl from the refrigerator and roll cookie mixture into one to one and a half inch balls using your hands. Place balls in rows one of the parchment lined pan, not touching, and place in the freezer for 30 minutes.
While balls chill, melt two bags of primary dipping color candy according to package directions, stirring frequently. If candy is too thick after melting add Crisco, 1 Tablespoon at a time, until it is thick enough to coat the back of a spoon but still thin enough to drip off. Be sure to completely incorporate the Crisco before determining whether more is needed.
When candy coating is melted, remove balls from freezer and insert a toothpick into the top of each one. Dip a hardened cookie ball into the melted candy coating, swirling to remove any excess. Place on paper-lined cookie sheets, not touching. When all balls are coated, place the sheet pans back into the refrigerator for 10 to 15 minutes to set. Once they are fully set, you will be able to wiggle the toothpick out of the ball without much effort at all. The hole in the top of the ball will be hidden when you drizzle with your contrasting color of candy.
Melt about ½ the bag of secondary color candy (you can melt more if you need it), by placing in microwave for two minutes; stir the candy coating every 20 seconds until completely melted. You can utilize a pastry bag with a small tip or a sandwich or quart sized ziplock bag. If utilizing a ziplock baggie, stuff the bag inside a large glass or plastic cup with opening covering edges. Once secondary color is melted, pour into ziplock lined cup. Remove the bag from cup and seal. With sharp scissors cut a small opening in one of the bottom corners. Remove the chilled, set balls from the refrigerator and drizzle with contrasting candy.
Once decorated, return to the refrigerator for another five to ten minutes to fully set.
